Over the past few years bread has been gathering a rather negative reputation among the health-conscious community. But for millions of people, whose life is away from gluten-free tags, bread remain a staple food which is sometimes consumed during every meal of the day, as it has been for centuries. 

The way bread is made commercially nowadays is indeed a reason to ring an alarm about what is going inside our bellies. But if we look at traditional home preparation of bread around the world, it might paint a different picture.
