Rhubarb and Strawberry Pie Recipe (Vegan & Gluten-free)

Rhubarb and strawberry pie is a favourite treat during the spring and summer season! Our recipe is not just much easier than a traditional version, but also much healthier, moreover it suits for vegan and gluten-free diet.

Rhubarb is not just delicious, sweet and tangy addition for your desserts, it also has unique medical properties. It aids in digestion, strengthens bones and prevents osteoporosis. The season of rhubarb is short, so make sure to enjoy as much as possible while its available! We hope our healthy pie recipe will help you to make it a regular guest in your kitchen.


For the crust: 

– 2 cups oats

– 1 cup dates

– 2 flaxseeds (to make 1 flaxseed mix 1 tbsp of ground flaxseeds with 3 tbsp water and keep in the fridge for 15 minutes)

For the filling:

– 200 gm strawberries

– 200 gm rhubarb

– 1/2 cup sweetener (we used coconut sugar)



Step 1. If you are using oats make oat flour  – just process the oats in a food processor into fine powder.

Step 2. Make a smooth paste from dates: process them in a food processor together with several spoons of water. Dates paste should have a consistency of a thick, sticky puree.

Step 3. Mix all the crust ingredients and knead them into dough. Put aside until the filling is ready.

Step 4. Prepare the filling. Cur rhubarb into small pieces and heat it in a deep sauce pan. Add a sweetener and mix well. If it is too sticky, you can add a bit of water.

Step 5. Add chopped strawberries and cook together for about 5 minutes. You can make any consistency you like – we prefer to have it with whole chunks of berries.

Step 6. Roll the dough in a pie mould or fit into small cupcake moulds. Put the filling inside and cover with dough crumbles on top .

Step 7. Bake at 180C for 20 minutes.

Your delicious and healthy pie is ready, you can share it with your loved ones!

French Quiche made easy

French cuisine is famous for its elaborate and elegant dishes – but not all of them are as complicated as you think! A popular quiche is a unique treat – it can be eaten cold and hot, for breakfast, lunch or dinner, and its fillings are only limited by your imagination. We would like to share with you our simplified, healthy option of quiche recipe – we hope you’ll love it as much as we do. Let us know in the comments what your favourite quiche filling is!


  • whole-wheat flour – 1 cup
  • ghee (purified butter, can be substituted with regular butter) – 1/3 cups
  • eggs – 2 large


For the filling of your quiche you can use any vegetables, in any combination. I like to mix flavours of broccoli, red paprika and spinach, so I’m suggesting the following filling:

  • onion – 1 large
  • broccoli – 2 cups
  • red bell pepper – 1 large
  • tomato – 2 mid-sized
  • mushrooms – 1/2 cups
  • eggs – 3 large
  • your favourite herbs for garnishing

Step 1. Mix flour with ghee – it should obtain a crunchy, uniform texture. Be patient, it will take a few minutes – basically, you need to rub flour and ghee into each other.

Step 2. Whisk 2 eggs slightly and mix them with the flour and ghee. “Massage” the dough nicely, until you can roll it into a firm ball.

Step 3. Preheat your oven to 200C. Line a tart tin with the greased baking paper, roll your dough and line the tin with the pastry. Put the crust into the oven for 5 minutes, then take it out and put aside.

Step 4. Prepare the filling: fry onions. In a separate pan, fry mushrooms and the rest of the vegetables. Note that vegetables should not be overcooked, and should retain a slightly crunchy texture.

Step 5. Mix cooked filling ingredients with remaining whisked adds and fill in the crust with it. Cook in the oven for 20 minutes. Your quiche is ready when the eggs are thoroughly cooked

Add any herbs for garnishing and enjoy this easy quiche with the entire family!

Lavender Popsicles – Summer Remedy for Headaches and Anxiety

Ice cream or popsicle as a remedy for headaches and anxiety? Sounds like a dream, but we made it a reality for you! During hot summer days we crave for a refreshment, and nothing can be better than eye-catching homemade popsicles, made with fresh lemon, blueberries, honey and a secret ingredient, lavender. Lavender is a magic flower, and not just because off its appealing purple color and unique aroma. It is also an effective remedy for headaches, migraines and anxiety.

We designed a special summer recipe for you, which combines a refreshing and aromatic taste of lemony lavender together with its medicinal properties. The best summer treat you can imagine!

  • dry lavender flowers – 1 tbsp
  • boiling hot water – 300 ml
  • lemon juice – squeezd from one medium-sized lemon
  • honey – 2 tbsp
  • blueberries – a handful, for decoration 

Step 1. Cover dry lavender water with hot water and let it sit for 15-20 mins.

Step 2. Squeeze lemon juice into the jar with lavender and water.

Step 3. Add honey to the jar. Be careful and make sure that water cooled down enough – honey should not be added to water which temperature is above 42 degree C. Stir the mixture nicely. 

Step 4. Take popsicle moulds and fill them up with blueberries, as much as you like. Pour lavender mixture into the moulds through the strainer.

Step 5. Freeze for at least 4 hours.

Enjoy your popsicles on a hot summer day, as a remed for headache or just for its delicious taste!
