Buckwheat Pancakes (Eggless)

Buckwheat pancakes are the easiest and the healthiest breakfast you can imagine. Made without eggs, only with buckwheat flour and other healthy plant-based ingredients, it’s perfect even for a gluten-free and a vegan diet.

Buckwheat flour is one of the most nutritious flours that are available in the market, it is rich in protein, fiber and vitamins. This type of healthy pancakes is definitely the best meal with which you can start your morning energized, without wasting too much time on cooking.

Ingredients (9 pancakes):

  • buckwheat flour – 1 cup
  • milk (for vegans: can be replaced with any non-diary milk, like banana milk or almond milk) – 1 cup
  • 1 ripe banana or 1 cup apple sauce
  • 1 tbsp of melted coconut oil
  • 1 tsp natural baking soda
  • 1/2 tsp cinnamon
  • any nuts or seeds of choice – a handful
  • maple syrup (optional)

Method:

Step 1. First, add to the bowl all the dry ingredienets: flour, baking soda, cinnamon. Mix everything thoroughly.

Step 2. Mash a banana with a fork until only tiny chunks are left.

Step 3. Add wet ingredienets to the batter: milk, coconut oil, mashed banana and a liquid sweetener, if using. Add chopped nuts and seeds to the batter, if using, mix well.

Step 4. Fry on a non-stick or slightly greased pan, adding small portions of the batter to the pan with a spoon.

Serve with honey, maple sirup, apple or strawberry sauce! 🙂

No Bake Chocolate Tahini Dessert Bars | Vegan, Gluten-free

This easy and healthy, no bake sugar-free dessert can be made in a matter of minutes. It features only four ingredients, and each of them can easily be named a superfood. These dessert bars are perfect for healthy chocolate lovers and for people who want to lead a sugar-free lifestyle.

One of the key ingredients of this dessert is tahini. Many people who learn about the health benefits of tahini want to include it in their diet, but are often confused how to do it, and this is a recipe I would always recommend to start with.

If you are into meal prep, you can also freeze it and enjoy it for the weeks to come.

This is a type of a recipe that we teach in our Easy Healthy Desserts Course and also include our Pregnancy Meal Plan due to its high iron content.

Ingredients:

  • 1 cup tahini
  • 1 cup dried dates, soaked
  • 1/2 cup cocoa powder
  • 1 cup coconut flour

Method:

Step 1.  Pulse dates in a food processor until they turn into a homogeneous paste. Make sure there are no lumps and pieces. If necessary, you can add a few spoons of water.

Step 2. In a mixing bowl, combine tahini, cocoa powder and dates. Mix thoroughly.

Step 3. Now, start adding coconut flour. Add one spoon at a time, to make sure that it folds into the dough nicely. Only use half a cup of the coconut flour. The mixture should resemble a cookie dough, which can easily be shaped into a ball.

Step 4. Press the dough into a rectangular cake pan.  Spread the remaining coconut flour on top evenly and press it very tightly. It should form a second layer.

Step 5. Put the dough into a freezer and keep their for 20 minutes. After 20 minutes take it out and cut into equal squares.

Keep these chocolate tahini dessert bars in the fridge for several days (I’m sure, however, that they will not last that long!)

Chocolate Panna Cotta without Gelatine | Easy Recipe with Raspberry Sauce (vegan)

Chocolate panna cotta with raspberry sauce is a delicious and easy dessert, that is really perfect for the summer season when there is a great choice of berries.

Our version is vegan, we don’t use gelatin and dairy milk, and it is also very easy and fast to prepare: it only takes 15 minutes to prepare and 30 minutes to set!

Ingredients:

  • coconut milk – 1 cup for 5 small panna cottas
  • raw chocolate powder – 2-3 tsp
  • dark chocolate (optional) – 20 gr
  • jaggery – 2-3 tsp (or another sweetener of your choice)
  • vanilla bean – ½ (optional)
  • agar-agar – 1 tsp
  • raspberries for sauce

Kitchen tools:

Method:

Step 1. Start with adding milk into the sauce pan and heating it. Leave just a little bit of milk to mix with agar-agar later.

Step 2. When the milk starts getting a little bit warm add the raw chocolate powder, mix until the chocolate is dissolved. Add the sweetener of your choice and the pieces of dark chocolate if you want, give a nice mix, wait till all the ingredients are melted. If you use pieces of chocolate keep in mind that it will take some time to melt. Open the vanilla bean and scrape the insides into your mixture.

Step 3. Dissolve agar-agar in the coconut milk that you have left before. Mix it well, make sure that there are no chunks.

Step 4. Add agar-agar to your chocolate mousse. You should add it very slowly and keep steering, so that no chunks are left.

Step 5. Keep heating your mix, let it come to boil and continue to cook on a very law flame for about 2-3 minutes.

Step 6. Remove your panna cotta from the stove and put it into silicon molds. Put them into the fridge for about one hour (usually it takes 30-40 minutes to set, but it will depend on the size of your panna cottas).

Step 7. When the dessert is set, take it out of the fridge. Run a knife on the side of the mold to be sure that panna cotta will come out easily and flip it to a plate. Blend the raspberries into a puree and use the sauce to decorate your dessert – if you want, you can sweeten your raspberry sauce, but we love the mix of sourish flavours!

Your chocolate panna cotta with raspberry sauce is ready! Enjoy your healthy and delicious dessert!

Ayurvedic Ginger Tea Recipe

Ginger has long back concurred the hearts (and stomachs) of nutritionists and health-conscious people. Before it got introduced into the western cuisine, where it was mostly used for sweets, it’d been used in Asian cuisine for thousands of years. Nowadays health benefits of adding ginger to your diet are widely known – it is a powerful digestive aid that helps to absorb nutrients, a warming spice, that relieves stress and stimulates appetite, and can be used as a home remedy against many common diseases.

Ginger tea is a popular recipe, where the  root is often paired with lemon and honey. I would like to share with you a different version of ginger tea, featuring very simple ingredients, that  fuse into an amazing flavour, not to mention all their health benefits. During my nutrition classes at an Ayurvedic clinic in Mysore we used to sip this tea at all times, and it has become a staple in my kitchen since, and it is one of the favourite drinks we serve at our Ayurvedic Nutrition classes in Stuttgart.

 

INGREDIENTS

  • fresh ginger (1 x 3 cm piece)
  • 2 tsp jaggery/panela/gur (except for honey)
  • 1/2 tsp green tea
  • few drops of lemon juice (optional)
  • 2 cups of water

 

METHOD

Step 1. Pour water into a small pot. Add peeled and sliced ginger, grated  jaggery and green tea.

Step 2. Bring water to boil. Boil the tea for about 1 minute, switch off the heat and let it sit for a few more minutes. The longer it sits, the stronger the taste of the ginger will be.

That’s it – your ayurvedic ginger tea is ready!

*Some practitioners give a word of caution against taking ginger tea in the evening due to its strong heating qualities, that can cause unrest and insomnia. Don’t forget that everything should be taken in moderation.

Healthy Chocolate Cookie: Gluten-free and Vegan Recipe

Festive season is here, and it means it is high time for baking experiments! Eating aromatic cookies, spiced with cinnamon and nutmeg, has become a tradition, and all kids start craving for a sweet treat like they crave for a gingerbread man.

As always, we re-created a traditional recipe for you, but this time with a twist – it is simply much healthier than any cookies you’ve ever known! A delicious chocolate sweet, it is made only used plant-based ingredients, and there is a huge room for experimentation if you want to substitute something.

Try this Christmas recipe and let us know how it came out!

  • gluten-free oat flour or oats (you’ll need to make fresh flour from them in a food processor) – 1 cup
  • grated coconut – 1 cup
  • coconut oil (melted) – 5 tbsp
  • flaxseed egg (to make 1 egg mix 1 tbsp of ground flaxseeds with 3 tbsp of water, and let it sit for 15 minutes in a fridge, until it gets a consistency of an egg white) – 3 “eggs” / made with 3 tbsp of flaxseeds
  • raw chocolate / cacao – 3 heaped tbsp
  • jaggery / sweetener of choice – 1/2 cups

Step 1. In a separate bowl, whisk jaggery together with flaxseed eggs.

Step 2. Mix the rest of the ingredients together, add jaggery with flaxseed eggs and knit the dough, until it rolls into a ball.

Step 3. Roll the dough out to a 0.5 cm thickness, cut desired shapes with a cookie cutter and bake at 180 °for about 25 minutes.

Your cookies are ready! For additional taste you can also add orange zest, or tiny stars made from fresh orange juice and agar-agar (like in the picture). We hope you’ll enjoy your healthy and delicious festive treat, and so will your family!

Healthy Apple Gummy Rolls

Who doesn’t dream about a healthy candy? We’ve got a wonderful recipe for you, which requires only one (!) ingredient, but tastes like a sweet stretchy gummy bear!

In every traditional cuisine you can find recipes of healthy desserts, mostly made purely from fruits, without any additives like sugar. Most of the recipes involve different techniques of boiling fruit juice or drying it, and likely many of these techniques are easily adapted to modern kitchens.

Our version of the delicious and healthy apple gummy roll is extremely easy and only requires a bit of patience! It can also be stored without refrigeration for several months, but truth to be told, it rarely lasts that long, because it simply tastes too good!

So, believe it or not, you only need one ingredient:

  • apples (any type) – 2 kg, it is enough to cover two standard baking trays 

Step 1. De-seed apples and cut them in chunks.

Step 2. Without a single drop of water, cook apples in a pot with a thick bottom until they become soft. Depending on your pot or apples it will take 20-40 minutes in total to bring them to the right consistency.

Step 3. Process the apples in a food processor until the mixture becomes very smooth, just like baby food.

Step 4. Spread the apple puree on a parchment paper, lied on a baking tray. Your layer of apple puree should be about 0.5 cm thick.

Step 5. Put the tray into the oven and “bake” it for about 5 hours at 90°C. Your apple puree needs to dry, but it should still remain slightly soft. When the candy is ready, you will be able to easily separate it from the parchment paper. You can then cut in long stripes with kitchen scissors and roll each of the stripes so that it looks just like in the picture!

Store your apple gummy rolls in an air-tight jar and enjoy as a special treat!

Healthy Chocolate-Orange Mousse Cake (from pumpkin!)

Who doesn’t like chocolate and especially a rich chocolate cake? It is hard to believe, but a favourite treat can be done very healthy, as well as ver quickly, if you follow our recipe! A secret “base” ingredient in this dessert is a squash, but trust me, nobody will ever guess that it is inside! It is very important to use the right type of squash (muscat), because it is one of the sweetest pumpkin types available. In fact, muscat squash will be your best companion if you decide to experiment with sweet pumpkin dishes. 

To achieve the right texture of your cake make sure that you steam the squash, instead of boiling it or baking. Apart from that – there are no special secrets, as the recipe is surprisingly easy! Enjoy your cooking process and don’t forget to share the result with the loved ones, as sharing chocolate is the best way to make them happy!

Chocolate mousse:

  • muscat squash – 2 cups (ca. 500 gr.)
  • raw cocoa powder/chocolate – 3 heaped tbsp

  • orange zest – from 1 medium-sized orange (try to use organic orange)

  • honey (or liquid sweetener of choice) –

Crust

  • 1 cup almond flour

  • 1 cups oat flour (you can also take 2 cups of oat flour or 2 cups of almond flour only, depends on your taste preference and availability!)
  • 1/2 cup raisins

  • 1/2 cups dates

Step 1. Peel the squash, remove seeds and cut in cubes. Steam it until ready (ca. 20 minutes).

Step 2. Let the steamed squash cool down. Then process it in a food processor along with chocolate, orange zest and sweetener of choice. Put in the fridge to set.

Step 3. Prepare the crust: process all ingredients together in the food processor, until it forms a smooth dough.

Step 4. Press the dough into the cake mould. Take the squash mass out of the fridge and spread evenly on the top of the crust.

That is it, your cake is ready! The beautiful thing about this recipe is that you don’t even need to keep it in the fridge overnight, but can start indulging straight away – we promise, it will taste amazing.

Apple Halwa: Easy Warm Apple Dessert

There are so many amazing sweet dishes you can make with apples, but very few people know about this version of a famous Indian dessert – apple halwa. It is usually enjoyed warm, which makes it a great comfort food – not to mention how easy it is to prepare! Cardamom and cumin seeds in combination with apples create a very addictive flavour, but luckily it is not a type of dessert you should be afraid of. If it is available – make sure you use jaggery, and not any other sweetener, as only then it will get a beautiful caramel kind of taste.

    • apples (sweet and sour in taste) – 4 medium-sized
    • green cardamom – 4-5 pods
    • ghee (or butter, but can aslo substitute with coconut oil for a vegan option) – 1/2 tsp
    • jaggery (unrefined sugar) – 4-5 tsp
    • fennel seeds – 1/2 tsp
    • nuts for decoration 

Step 1. Grate four medium-sized apples coarsely.

Step 2 . Heat 1/2 tsp ghee (butter/oil) on medium heat, it is the best to use a wok for that.

Step 3. Add 1/2 tea spoon fennel (optional).

Step 4. Add the grated apples and cook until it is soft and pulpy. cooking time is usually about 10 minutes.

Step 5. When the apples are cooked, add grated Jaggery and mix well until the jaggery is well absorbed. Adjust the amount according to the sweetness required.

Step 6. Turn off the heat. Make sure not to overcook the apples!

Step 7. Skin cardamom pods, crush them and mix well.

Step 8. Add a handful of roasted almonds, cashews or dry fruits of your choice to garnish your freshly made halwa!

Serve your apple halwa warm, it makes it the best autumn treat for a fresh afternoon!

Easy Plum Pie and Filling Recipe

 

It is difficult to find a better sweet treat for a September afternoon than a plum cake! If you are lucky to have a garden and a plum tree yourself, then you know how generous nature is in sharing this yummy fruit. At times there are so many of plums from one single tree that you have no idea what to do with them – so let us give you an idea.

A combination of chewy crust and a delicate plums filling create a delicious dessert, which can be enjoyed warm or cooled, at any time of the day. Our recipes is suggesting you a healthier and easier version of a traditional plum pie – without compromising its taste. Try our plum pie recipe and let us know how you liked it!

Crust:

  • whole wheat flour – 1 cup
  • grated coconut – 1 cup
  • sweetener of choice (jaggery or panela are the best option) – 1/2 cup
  • ghee (purified butter) or regular butter -4 big tbsp
  • eggs – 2 small
  • baking soda – 1/2 tsp (optional)

Filling:

  • fresh plums – 8-10 medium-sized
  • jaggery or panela – 3 tbsp
  • clove – 5 buds
  • cinnamon – 1/2 stick 

Step 1. Whisk eggs together with the sweetener of your choice.

Step 2. In a separate bowl, mix whole wheat four, grated coconut and baking soda. Add ghee, whisked eggs and mix together nicely.

Step 3. Knead the dough for couple of minutes, roll it into a bowl and put in the fridge.

Step 4. Prepare your filling. Pit the plums and cut into six peaces each. Mix with grated jaggery in a sauce pan and bring to boil. Keep boiling for 2-3 minutes, until plums become soft, but before they start loosing skin, and put aside.

Step 5. Take the dough out of the fridge and roll into a a desired shape (square or circle, whatever you prefer).

Step 6. Spread the filling on the dough, leaving about 1.5 cm on the sides. Then fold the sides of the dough (like in the picture), so that the filling stays in place.

Step 7. Preheat your oven to 180 C. Bake the pie for 20-25 minutes, until dough is ready

Your delicious plum pie is ready! Enjoy with a cup of coffee or tea on a fresh autumn afternoon.

Sugar-Free Strawberry Coconut Cake (Raw/No-Bake)

Raw, no-bake strawberry coconut cake is a perfect dessert for summer! While berries season is in full bloom you should enjoy it as much as possible, and we would like to suggest you yet another way to add them into a delicious home-made dessert. It is made out of very simple and healthy ingredients, with no sugar or colorants added, as natural flavours and colors are just enough. As this dessert tastes wonderfully frozen, it is a great option to satisfy your ice cream craving as well. And the best part, as always – it is very quick and easy to prepare!

 

Crust:

 

  • oats (or ready oat flour) – 1 cup
  • grated coconut – 2 cups
  • honey (can be replaced with 1/2 cup dates) – 4-5 tbsp
  • coconut oil – 2 tbsp

 

Filling:

 

  • strawberries – 1 cup
  • chia seeds – 2 tbsp
  • sweetener of taste – 2 tbsp 

Step 1. Prepare your filling: process strawberries in a blender until it tuns into a thick liquid, mix with chia seeds and set aside for at least 30 mins. When chia seeds expand, it should look like a thick jam. The longer you let it sit, the better!

Step 2. Prepare your crust: process oats and coconut in a blender. Mix with melted coconut oil and honey (or dates syrup). The dough should be a little crumbly, but it should nicely stick together. You can add more honey or 1-2 spoons of liquid if it doesn’t stick together well enough.

Step 3. Split your dough into two parts. Press one part into the mould. Put your ready strawberry-chia jam on top. Cover with with se second part of your dough – as if you were making a sandwich!

Step 4. Put your cake in the freezer and leave there for about two hours to set. Once you take it out – you cake is ready!

Before serving you can leave the cake outside for 10-15 minutes if you like it softer, or you can serve it as a frozen treat, which works just perfectly for summer.
