Broccoli Salad Recipe with a Healthy Dressing

Broccoli salad can be prepared in various ways, but the main secret for its irresistible flavour will always be the salad dressing. Our recipe of the broccoli salad with a healthy salad dressing might be enjoyed even by people, who are notbig fans of broccoli otherwise.

It’s been proved by recent research that raw broccoli is much healthier than cooked. In other words, if you want to enjoy all the health benefits that this wonderful vegetable provides, than you should eat it uncooked. You can modify the dressing the way you like and adjust it to your taste buds. It can also easily be made oil-free, if you want to go for the healthiest option possible. This recipe is just a suggestion, but when it comes to any salad, there are no hard rules, so feel free to follow your own creativity.

Ingredients:

Salad ingredients:

  • Florets of a medium-sized broccoli, separated from the stalk
  • 1 tomato
  • 1 carrot
  • a handful of roasted almonds

Dressing ingredients:

  • 2 cloves of garlic
  • 3 tsp of balsamic vinegar
  • 2 tsp of liquid sweetener (maple syrup or honey)
  • 2 tbsp of dried mint
  • salt to taste
  • 2 tsp of olive oil (optional)

Method:

Step 1.  Separate broccoli florets into small pieces.

Step 2. Chop tomato, carrot and almonds into small pieces.

A popular way to prepare a dressing is to mix all the dressing ingredients in a separate bowl, and then mix them with a salad. We will follow a different method and add all the dressing ingredients to the salad right away. Then, we will let the vegetables sit in the dressing and absorb all the flavours.

Step 3. Add vegetables and almonds to a salad bowl, add dry mint and mix everything nicely together.

Step 4. Squeeze garlic cloves, add vinegar, salt and a liquid sweetener. Mix everything together once again to make sure that the vegetables are nicely coated with the dressing ingredients. Put the salad aside for at least 30 minutes, so that broccoli florets can absorb all the flavours.

Step 5. If you are using oil, add it as the last ingredient before serving, mix everything together for one last time, and your salad is ready to be enjoyed!
