No Bake Chocolate Tahini Dessert Bars | Vegan, Gluten-free

This easy and healthy, no-bake sugar-free dessert can be made in a matter of minutes. It features only four ingredients, and each of them can easily be named a superfood. These dessert bars are perfect for healthy chocolate lovers and for people who want to lead a sugar-free lifestyle.

One of the key ingredients of this dessert is tahini. Many people who learn about the health benefits of tahini want to include it in their diet but are often confused about how to do it, and this is a recipe I would always recommend to start with.

If you are into meal prep, you can also freeze it and enjoy it for the weeks to come.

This is a type of recipe that we teach in our Easy Healthy Desserts Course and also includes our Pregnancy Meal Plan due to its high iron content.

Ingredients:

  • 1 cup tahini
  • 1 cup dried dates, soaked
  • 1/2 cup cocoa powder
  • 1 cup coconut flour

Method:

Step 1.  Pulse dates in a food processor until they turn into a homogeneous paste. Make sure there are no lumps and pieces. If necessary, you can add a few spoons of water.

Step 2. In a mixing bowl, combine tahini, cocoa powder, and dates. Mix thoroughly.

Step 3. Now, start adding coconut flour. Add one spoon at a time, to make sure that it folds into the dough nicely. Only use half a cup of coconut flour. The mixture should resemble a cookie dough, which can easily be shaped into a ball.

Step 4. Press the dough into a rectangular cake pan.  Spread the remaining coconut flour on top evenly and press it very tightly. It should form a second layer.

Step 5. Put the dough into a freezer and keep it for 20 minutes. After 20 minutes take it out and cut it into equal squares.

Keep these chocolate tahini dessert bars in the fridge for several days (I’m sure, however, that they will not last that long!)
