No-bake Carrot Cake (sugar-free, raw, vegan)

No Bake Carrot Cake


  • 3 medium-sized carrots
  • 1.5 cups oats
  • 1/2 cup dried coconut
  • 1.5 cups dates (soaked in water for t least 30 mins)
  • 1/2 teaspoon cinnamon
  • 1/2 cup roasted walnuts


Step 1. Grate carrots.

Step 2. Grate oats and coconut in a blender to a flour.

Step 3. Process dates in a blender/food processor until it reaches a creamy consistency.

Step 4. Break walnuts into small chunks (with a small spin of a blender or chop with a very sharp knife).

Step 5. Add cinnamon and mix all ingredients together until they form a thick dough.

Step 6. Press into a cake form and put into a freezer for 1 hour.

Step 7. Top the cake with a cream of your choice (cashew cream for a vegan version, cream cheese frosting etc.). Enjoy your cake! 🙂
