Cooking radishes might sound like a totally wild idea, but if you give a try to our roasted radishes recipe, this will feel like the most natural thing to do! The combination of a pungent radish flavour with lemon zest and spicy green pepper is irresistible, and deserves to be a part of everyone’s menu.
One more beautiful thing about roasted radishes is their texture. Especially if you cook them whole, they taste like watery mini bombs, that explode in your mouth with flavour. And surely this dish can get an award as one of the most colorful and visually appealing.
If you don’t want to eat radishes on their own, you can also add them to other vegetables when roasting. They have the power to make otherwise boring dish look beautiful and colorful, and attractive even for picky eaters. A special bonus is the ease of this radishes recipe, you literally just throw them in the oven, and in 15 minutes a gorgeous side dish is ready.
Ingredients (2-3 portions):
- 1 bunch of round pink radishes
- half a lemon
- 1 tsp of green or black peppercorns
- a few drops of olive oil
- salt to taste
Method:
Step 1. Cut off the radishes greens (you can use them in a different dish). You can either cook the radishes as a whole, or cut them in half, then they will cook faster.
Step 2. Grind the peppercorns coarsely, and add to the radishes.
Step 3. Cut the lemon in small pieces and add to the bowl with radishes, along with salt.
Step 4. Mix the radishes with ground pepper, lemon pieces and salt by “massaging” it, add a few drops of olive oil and mix it again.
Step 5. Roast at 180C in the oven for 15-20 minutes, until ready.
Enjoy on its own or mixed with other roasted vegetables!
