Buckwheat Pancakes (with bananas and walnuts)

Buckwheat Pancakes (with bananas and walnuts)

  • buckwheat flour – 1 cup
  • milk (for vegans: can be replaced with any non-diary milk, like banana milk or almond milk) – 1 cup
  • egg (for vegans: can be replaced with chia seeds egg) – x1
  • ripe banana – x1
  • walnuts – a handful 

Step 1. Mix buckwheat flour, milk and egg with a mixer to the consistency of a smoothy.

Step 2. Mash a banana with a fork until only tiny chunks are left.

Step 3. Add mashed banana and chopped walnuts to the batter, mix well.

Step 4. Fry on a non-stick or slightly greased pan, adding small portions of the batter to the pan with a spoon.

Serve with honey, maple sirup, apple or strawberry sauce! 🙂
